When I try to cuvre my brush to make an arch, the tut. on it says that when I go to Primitives and choose End Cap that an arch should form... but instead of an arch I get not change except some odd looking lines in the square. What am I doing wrong?

Your arch is facing the wrong direction. Check the views in that video and try to match them.
