You can use LOD, or simple patch mesh (under curve).
Here is a tut about LOD terrein:

It's pretty simple

The problem I find with LoD is that you can not move the vertexes around unlike Patches.
You can shape Patches anyway you like.

I've seen LOD terrain used for a few mountains and performance is quite bad. They don't look much like mountains, either.
