Ok, maybe it is me, but it seems like you are making this so much more complicated than it needs to be. Your TRIGGER/switch should be the thing that doesn't reset for 5 seconds, not the life of the canteen. Or maybe I misunderstand you.
Again, HOW is the canteen triggered??? If you use a normal 'switch' that the player will press the 'use' key (e) to trigger, then you *should* have a physical brush that looks like and acts like a switch like in a TOW map. That way you can attach parameters to it that will have the player use the switch...it will visably MOVE, spawn a canteen, return to the normal position and then be inactive for 5 seconds or however long you want.
I don't think you've been very clear on exactly WHAT you want to happen. Do you want multiple canteens at once? Or just one every 5 seconds??? In order to set it up right you need to clarify...and using the 'remove' statement should remove ALL of the canteens because they spawn with the same '$targetname'. Seems to me that you should spawn ONE canteen at a time and have a longer/more realistic delay before the next spawn. But, that's just my opinion.

when u press the trigger, a canteen spawns ONLY1, and afther the canteen is spawnned the trigger has to be disabled for 5secs, then you can re-use it again so you can get an other canteen

I think JV's idea is the best if you use a trigger to spawn the health and use JV's idea
You control how and when the health spawns . Only thing is it may not allow heath drops by players when killed not sure about that . You would have to spawn health at different places in the map as well .Not sure if this is what you're looking for, but you can disable respawning of any item with the set_respawn command:
$myjuicycanteen set_respawn 0
