This is an intro to modeling, it is designed to get you started making models. Hope you like it!
Well, the first thing you need is a good 3d modeling program. Here are some good ones:
Gmax
http://www4.discreet.com/gmax/
This is a watered down 3DSMax program. It is FREE and it supports a few games.
3DSMax
http://www4.discreet.com/3dsmax/
It costs some money, but it is probably one of the best programs out there. Shrek was made in here. Discreet offers a free 30 day trial. But becarefull it is over 1 gig in size.
Maya3D
http://www.alias.com/eng/index_flash.shtml
Also a very powerfull 3d program. It is free for students and non comercial use, the license is around 3k.
Blender3D
http://www.blender3d.com/
Free open source 3d program. Very nice and about 3 megabites big. But well worth the download.
Lightwave
http://www.newtek.com/
Lightwave is another very powerfull 3d program. It has a trial demo.
Milkshape3D
http://www.swissquake.ch/chumbalum-soft/
This is a not so powerfull program, it costs around 30 bucks, and has a free trial. But it has plugins for A LOT of games so check it out.

This is a list of tutorials that will help you with your education.
www.google.com
This is a VERY powerfull search engine. Use it wisely to search for new tutorials or plugins.
